I know of two others (from the signs I see on the road for my daily commute):

Tipperary:

Ballylooby Christmas Fair
Sunday 6th December: Located in a little village between Ardfinnan and Clogheen. Christmas food, wreaths, decorations and crafts.

Limerick:
Pallasgreen Christmas Fair
Sunday 6th December: Christmas food, wreaths, decorations and crafts.
